The not checked checkbox currently has a black border by css rule md-checkbox.md-default-theme .md-ink-ripple, md-checkbox .md-ink-ripple (color style):

Imo this color is not perfect because of the contrast and could be changed. Not sure about the target color which would fit the best.

Thought about this, too, but personally I didn´t like it that much after I applied it. One thing I dislike about this is that it mostly is used for either focused or active elements but both things aren´t the case here. I thought gray might be good as this also is the default color for non focused input text fields (not sure about the exact gray color).
